Its delicate pink colour reminded him of the tones found in the work of Venetian Renaissance painter Giovanni Bellini — and the cocktail received the name that would later become known around the world.
Today, the Bellini remains one of Cipriani's signatures and a symbol of effortless Italian aperitivo culture.

The Story of Carpaccio
Cipriani is also responsible for another name that has become part of menus around the world: Carpaccio.
Created at Harry's Bar, the dish was named after Venetian painter Vittore Carpaccio, whose works were known for their distinctive shades of red and white.
